One of my favorite things about summer is that it’s watermelon season. There’s nothing more refreshing than enjoying a giant bowl of watermelon on a hot, humid Indiana day (well, besides sipping on wine slushies… but who says you can’t do both?).
Growing up, I had a sixth sense of knowing when my mom was cutting up a watermelon — I joke that I can smell it from a mile away. I would run downstairs and find her carefully chopping the juicy red fruit into perfect cubes. The whole watermelon never fit in the bowl, so it was always my job to eat enough to get the lid on.
A friend of mine introduced me to watermelon salsa a few years ago. My favorite style of food is Mexican, so there was no doubt in my mind that these two flavors combined would be amazing.
This recipe is a fresh, sweet take on traditional salsa, and it’s the perfect accompaniment for tortilla chips or over grilled fish, chicken, or steak. You can amp up the flavor by adding in diced mango, cucumber, or bell peppers. You can also swap out the cilantro for fresh mint, toss in some feta cheese, and mix with arugula to enjoy as a salad.

- 4 cups watermelon, cubed
- ½ cup cilantro, chopped
- ½ cup onion, diced
- 1-2 jalapeños, finely diced
- juice of 1 lime
- juice of 1 lemon
- salt and pepper to taste (optional)
Combine all ingredients in a large bowl. Gently toss and serve.
